Pork and Kraut Skillet

(SERVES FOUR)
Just 328 calories per serving in this calorie-trimmed German favorite from the Better Homes and Gardens "Good Food & Fitness"  cookbook.
Non-stick vegetable spray coating
4 pork loin chops, cut 1/2 inch thick and trimmed of fat
1 8-ounce can sauerkraut, drained and rinsed
1 cup shredded peeled potato (1 large)
1/4 cup chopped onion
1 tablespoon brown sugar
1 teaspoon caraway seed
1/4 teaspoon salt
1 large apple, thinly sliced
1/2 cup beer
1 tablespoon snipped parsley

Spray bottom of a 10-inch skillet with non-stick vegetable spray coating. Place over medium heat; brown chops on both sides. Sprinkle with a little salt and pepper; remove chops from skillet and set aside. In same skillet combine sauerkraut, shredded potato, onion, brown sugar, caraway seed, and salt; toss to mix. Arrange half of the apple slices atop sauerkraut mixture; pour beer evenly over all. Place chops atop. Cover and cook over medium heat about 20 minutes, or until chops are nearly tender. Arrange remaining apple slices atop; cover and continue cooking for 5 minutes more. Garnish with snipped parsley.
