Pork with Garlic

(SERVES SIX)
This is a simple but delicious French recipe. We usually use pork chops instead of pork shoulder butt.
3 pounds pork shoulder butt
1/4 cup butter
3 tablespoon oil
Salt & pepper
2 cloves of garlic
1 bunch of parsley

Cut the pork into equal-sized pieces. In a frying pan, heat half the butter with the oil. When the fat is very hot, brown the meat on all sides over medium heat. Season and continue cooking for 20-25 minutes. Meanwhile, peel the cloves of garlic and chop finely with the parsley. When the meat is cooked, discard all but 1 tablespoon of the cooking fat. Melt the remaining butter in the pan and add the chopped garlic and parsley. Stir for a moment over high heat, mixing with the meat, but taking care not to let the garlic brown. Place the meat on a heated serving dish. Serve immediately with flageolets or green beans.
